Opposite Saint-Lambert church, these Pères siffleurs (Whistling Fathers) maintain the joyful faith of Vaugirard's bon vivants in modern cuisine. Their liturgy consists of skilfully composed dishes. When we visited one evening in December, the chef had concocted a terrine de campagne-fruits secs-châtaignes, a tartare de veau-stracciatella-noisettes, a tempting joue de boeuf braisée, a filet de bar-trompettes de la mort-cèpes-épinards sauté and, to round off the dinner, a mont blanc aux marrons-confiture de myrtilles. Clever wine selection.
