François Lévêque has been succeeded by François Rodolphe, former chef at Peninsula in Hong Kong, who has also worked at Martinez in Cannes and Grand Hôtel Place de l'Opéra. As his predecessor, this Basque native puts on the table many local and seasonal products of high quality to create a little corner of countryside in Paris. He takes inspiration from some nice recipes from his native region such as Basque egg in piperade, crispy ham and piquillo stuffed with squid in Luziens' way, or even a grilled cod heart with coconuts and chorizo. But he also knows how to escape to give us a roasted Ardèche caillette, warm Puy lentil salad, or a Perche farm pig steak lacquered with sweet spices. As for dessert, French toast like in the old days, Armagnac ice cream and prunes, or roasted figs with beggar fruits and pistachio ice cream. It is a light and tasty cuisine that suits all appetites.
