Japanese chef Hideki Nishi has doubled his success with Pilgrim, having already seduced the fine-minded with his Summer Snow. In the kitchen, his compatriot Yurika Kitano. A sober decor (blond, white and grey), an open central kitchen, attentive service, graphic dishes with a harmonious mix of textures and flavours, such as the poultry-mussel-potato-shrimp supreme, and surprising desserts, like the green apple, kiwi, parsley-roasted avocado-pea crumble sorbet we tasted during our visit.
