As the boss himself says, bread is flour, water, salt and know-how! Max Poilâne (Lionel's oldest brother) is a figure with his wooden butterfly knot, velvet pants and vests. Mylène has taken over from his father since 1983 to ensure the good reception of the clientele and to ensure the quality of production, while also developing the activity by resellers. Sophie, his sister, opened his shop in Montparnasse. Max Poilâne chose to work with crushed stone flour and a grey salt on the Atlantic coast. The dough is kneaded by hand, before being put at rest in wicker baskets, then baked in the wood oven! Just as it was. The bread is perfect, just like baked bread or round rye bread. All of them are kept very well, but you can still choose in the range of rolls. The shop has retained an exterior to the old and the interior has a chic side. Possible expeditions throughout France.

Cette boulangerie est exeption avec un pain de qualité etvun personnel plus q'agreable je recommande cette boulangerie et hate d'etre a janvier prochain pour manger vos super galette.

Client fidèle,je ne me suis pas rendu dans la boutique,rue Brancion depuis quelques années.Habitant le Loir et Cher,je commande par tel,à réception de mon règlement,mon colis est expédié;pratique,efficace,plaisir gourmand assuré !!!Bravo et Merci pour vos produits !!!!!!!!
Excellent bread and pastries are worth the detour. Max Poilâne ever-present is a character! Do not miss a visit even if the place off the beaten track
That remains one of my favorite breads. A safe bet.
Bakery is a little bit lost below the 15C, near the Georges Brassens; but it is worth the trip. The bread is divine; less known but better, I find that of Poilâne large
