Majestic Indigo Restaurant in a sophisticated and amazing setting preparing bourgeois cuisine.
Caviar lovers know this institution well, which has been given a new lease of life with a menu designed by Yannick Alléno and a restored Art Deco interior. The three-starred chef (Ledoyen in Paris, Cheval Blanc in Courchevel) has kept several of the restaurant's iconic dishes - including the Christian Dior egg (an egg in jelly covered in caviar) - and offers, in addition to Prunier's "black grains", more contemporary recipes, such as this raw langoustine with geranium accompanied by a caviar cream, which was on the menu at the reopening.
