A passage on TV that gave him a new breath: he changed the name of his address and the décor of his ex-Osmose. But he didn't wait for this media recognition to prove himself, he just extended his empire and exposed his talent to a wider audience. We see Avenue de Versailles working with its entire brigade to compose live menus inspired by bistronomy and completed in finesse. The associations are surprising and inspired, the flavours are sublimed and the desire to come back to taste everything is immediate.
