Le Mathusalem is the stronghold of Thomas Kazandjian and Lionel Chauvin, grandson of the famous ice-cream maker Raymond Berthillon. This regular spot, at the foot of the Garigliano Bridge, has more than one trump card up its sleeve: its Art Nouveau decor, its friendly, knowledgeable staff and, of course, its cuisine, which carries the colors of tradition. On a July evening, a smoked salmon with lemon sauce and a homemade country terrine were served alongside a hay-roasted andouillette (necessarily 5A) and a poultry supreme with sweet potato cream. Reassuring.
