Je me suis demandé pourquoi il y avait des lamelles de truffe sur les poireaux vinaigrette : elles ne leur apportaient pas grand chose à part sans doute de justifier le prix du plat
Les noix de saint Jacques étaient petites mais surtout sèches en surface et pas moelleuses… l’accompagnement, là encore compliqué, ne pouvait pas sauver une matière première à la qualité et à la cuisson discutables.
Le dessert, une fleur d’agrumes gavotte croustillante, ainsi que les mignardises sont en revanche d’une délicatesse et d’une finesse remarquables : bravo !
Le décor est très réussi.
Globalement j’ai trouvé l’ensemble cher pour une prestation « deux étoiles » , même à Paris.
Les plats sont raffinés, les goûts sont prononcés.
