This sushi restaurant is a real standout in the sushi world, as its dishes are entirely vegan! Veganism prohibits the consumption of any food derived from animals, unlike vegetarianism, which only eliminates meat and fish. Christian Ventura, Mexican chef and defender of marine biodiversity, heads up this innovative establishment - a second has just opened on rue Jouffroy d'Abbans (17th arrondissement).
