Corsican Luc Negroni, 60, and his accomplice from Aveyron, Boris Desmons, 30 years younger, have taken over this neighbourhood establishment, whose decor celebrates the soul of Parisian bistros, in 2017. Together, these two seasoned restaurateurs have transformed the address into a temple of Aubrac meat. Boris, who left the Aveyron region at the age of 22, is indeed promoting his terroir on his plate by shopping at the Maison Conquet in Laguiole. The Manoir is particularly famous for its country burger: Aubrac steak, cantal and aligot! Luc, for his part, expresses his regional belonging through a selection of Corsican charcuteries. The establishment is thus a warm place, where it is also good to enjoy a good glass of wine, carefully chosen by these two musketeers with a strong character and a big heart.
