Small restaurant in Paris serving inventive French-Japanese cuisine and fish.
Opened in June 2016, this very small restaurant of 14 places quickly became one of the best Japanese tables in the capital. Or more exactly Franco-Japanese because the kitchen offered by the two very young chefs marries with rare inventiveness and elegance the two gastronomic cultures. The tasting menu offered in the evening is a festival of flavors: bluefin tuna tartare, egg yolk on oats bed, aromatic herbs and knives, mochi bar and grapefruit pulp, black fig liver… The cutting of the fish, the baked bats on the tepanyaki, the assemblages in the plate are a millimeter precision. If the map is very short with regard to wines but with fine white bottles in particular (Saint Joseph de Cuilleron and Savennières), we will find a more interesting choice of all the most amazing sake. Joël, the master of the places, brings all his knowledge and his love of Japan throughout the meal to make us even better enjoying this exquisite cuisine.
