Koskas and son is a house specialized in the sale of boutargue (or poutargue). But what is boutargue? At first glance it would resemble a flat sausage or foie gras. In fact, it is a product based on mule eggs that is salted, dried and then placed under wax protection to maintain its freshness and flavour. Boutargue can also be manufactured with tuna eggs. This specialty comes from the Mediterranean basin. Of all sizes and kosher, it can be tasted at the aperitif, grated to bring a special touch to a dish, in fine slats fried with olive oil or lemon. It is, however, a luxury product, the price of which can quickly fly huge. Koskas and son also sell fine groceries based especially on canned fish.
