Pushing the door to Azteca is taking a single step for Mexico. This address is the oldest in the capital and has been proposing since 1986 to introduce the Parisians to the flavors of this country. The room places a sun full of eyes with its précolombiens printed fabrics and vaqueros stools. On the map we discover a multitude of specialities, rich in spices and flavours, more or less known. We start with empanadas, they are small puff in cheese, or, maïs-fed corn patties, or champignon, guacamole or octopus from Mexico before they go to the discovery of unpublished dishes like the anogada anogada, a chopped beef with a walnut and pepper cream. But what really needs to be tasted is the pibil pibil, a typical shredded pork dish known for its sauce of pepper achiote, or the enchilada of mole pollo with a sauce of the atypical mixture of seven piments (ancho, mulato, chipotle, pasilla, etc.), black chocolate and spices then covered with melted cheese and mole sauce.
