Address in Paris offering a 100 % Japanese menu and a dish not to be missed: the gyozas.

A red and black decor and a kitchen open on the ground floor, a room on the first floor of 14 seats with clear wood and a 100% Japanese card featuring the vedette to all the sauces. If this is not done in Japan, see for the first time in Paris the ramen tonkotsu ramen (fairly thick and milky soupe) with ajima egg (calf egg simmered in soy sauce broth) mixed with fermented fermented. Other dishes not to be missed: gyozas (grilled ravioli on one side and fondants) served nature, leeks or piquant miso. No dessert, but frankly we don't know where you would have put it…

De retour d'un séjour au Japon, j'espérais déguster avec plaisir les meilleurs gyozas de Paris. Hélas, même s'ils sont dans mon Top 3 parisien, on ne retrouve pas la qualité de là-bas. Dommage, il faudra se contenter de ceux-ci pour des prix pas vraiment modiques vu qu'on en mangerait volontiers une dizaine.

Hakata Choten est réputé pour ses ramens originaux : noir (ail grillé), rouge (sauce épicée du chef)... Mais surtout pour ses gyozas sacrés meilleurs gyozas du Japon! Ce que j'aime dans ce resto, hormis ses ramens qui sortent des sentiers battus du quartier de l'opéra, c'est son ambiance avec le comptoir face au mur comme au Japon. On rigole pas, on savoure vite fait bien fait avec zuzutto à l'appui son ramen. Le lieu se veut moderne, propre et efficace, on ne se sent pas à l'étroit comme dans la plupart des cantine japonaises. Le hic? C'est le prix, on oublie qu'au Japon le ramen est une plat bon marché et on joue sur le phénomène de mode parisien... Dommage. Mais au moins, goûtez moi ces gyozas!
