Uma… Behind this Japanese contraction of "umai" that means delicious and "mi" which means taste is hidden the idea of a "fifth tasty taste" stated by Laurent Séminel who even wrote a book about it. In short, what interests us above all is this restaurant which, with such a name, can only surprise us. And indeed, the menu is a huge invitation to travel - and what a travel - which leads us into a big gap between Japan and Peru. Explosion is everywhere whether in the ceviche of gambero rosso prawn and raspberry or in the salmon with coffee-verbena butter. The dessert is no exception with alfajores. It's delicious shortbread filled with saffron and passion accompanied by a dulce de leche. An inventive, light and very fresh cuisine. Uma's boss, Guillaume Sudre, opted for a Zen decoration on two stories. Cocktail bar on the ground floor and counter on the first one to discover the chef, or in more intimate small dining rooms.
