Manoj Sharma is well known in the Parisian food scene. He worked at Akrame Benallal's Shirvan Café Métisse and opened Seoul Mama with his Korean wife. He is now behind the Opéra Comique where he has launched Jugaad, his first Indian restaurant. This talented chef, or rather his team, sends out some very nice dishes - like this marinated fish cooked in a banana leaf - inspired by North and South India. Some meats are traditionally cooked in front of us - the kitchen is open - in tandoor ovens. Apart from the extra side dishes (rice, potatoes...) and the unnecessarily loud lounge music, we can't help but agree!
