A gourmet wind from the Eastern Mediterranean has been blowing through the Bourse since Dalia moved in. Today, chef Steve Zylbersztejn is at the helm of this pink-ocre Levantine restaurant. From his open kitchen, he sends out plates of Israeli, Lebanese and Syrian flavors... On this particular evening, the promise of a hearty hummus and creamy chicken liver was more than fulfilled, and the lamb kebab with grilled peppers, tomatoes and chillies won us over. The atmosphere was cheerful, and the customers clearly delighted to be there.
