Here's a brasserie that shows at first glance that it has got good experience in the field and its history. It makes you want to sit in its comfortable and welcoming haven in a very green flowered spirit. Emilie Courtois, about 30 years old, a Parisian from Laguiole (where the famous knife and the good cheese comes from) who runs the Capitole, inherits her know-how from her family. It must be said that the young woman, who comes out of a commercial school, belongs to the third generation of brasserie owner. Her family has a long history in the field. It is a family and traditional cuisine, with fresh products (except the fries that are not homemade!), dishes as variable as varied, and from all the regions. Emilie, while preserving the tradition of an efficient and smiling brasserie, has developed a friendly atmosphere, welcoming the young people of her generation with boards of charcuterie and cheese, pints of beer and glasses of wine in a more festive atmosphere.
