On the background of Jazz music, flowing through Nova and rythm'n blues, Chef Hugues Gournay delights his guests with market cuisine and timeless dishes: calf's kidney, ravioles of beef, semi-baked foie, or dishes called "special diets" for those who eat without salt, gluten or simply who enjoy only steam. Hughes knows everything, and that is why we continue to appreciate it. Ah! last thing, Sâotico has nothing exotic: This is the name given to small shrimp in Cotentin.
