Nestled in a modern 17th-century design mansion that was France's first "à l'assiette" dessert restaurant, Dessance now celebrates vegetables in savory fashion. Its creator, Philippe Baranes, now offers Carte Blanche menus that excel in the art of presenting seasonal vegetables, fruit and plants: Terre & Mer and Végétarien menus. Original creations with precise, gourmet flavors are crafted before your very eyes on the open kitchen's marble countertop bar. Each menu is served with trios of appetizers and mignardises. Ingenious plates conquer the palate as time literally stands still in this cozy restaurant with its floor-to-ceiling wood art, a cocoon that received the City of Paris design award at its inception. The Chef uses the original tastes of seasonal vegetables, offering fresh, inventive and light cuisine: marinated seriole fish with julienne vegetables and grapefruit juice, or cannelloni with broad beans and peas. Food and wine pairings are recommended with each menu to perfect the tasting experience. Minute creations change with the seasons. The prices have taken a bit of a beating, but this should not be a problem given the novelty of the setting, cuisine and service.

Plateau de fromages en sus, mais sans grand intérêt par contre

Tout ce que je peux dire c’est qu’ aujourd’hui c’était juste parfait !
J’ai mangé en face du chef qui m’a bluffé !
Son flegme pour tout gérer est juste remarquable !
Son menu terre mer : une échappée belle dans les saveurs - Bravo !
Tout est pensé : la vaisselle - les couverts et même le pain !
Même si l’addition est un peu salée, allez y les yeux fermés !
Nous avions pris également l’accord mets vins de belle surprise une sélection surprenante.
Un petit de sucre sur les desserts à notre goût.
Une belle découverte !
