She's one of the most obvious talents of the young generation of chefs, and the opening of this restaurant in September 2023 won't prove otherwise. Former fencing champion Manon Fleury has decided to take the plunge and open Datil, in the Haut-Marais district (she previously worked at Le Mermoz, in the 8th arrondissement). The menu features two tasting menus: a five-course lunch menu and a seven-course dinner menu. The focus is on plants (but not just plants) in all their forms, with fine, original flavors.
