Address in Paris offering good traditional dishes at low prices and quality products.

The team behind Bouillon Pigalle has doubled down with Bouillon République. Here you'll find all the ingredients that made their first address such a success: good, traditional dishes (eggs mayonnaise, sausage-purée, roast camembert, cauliflower gratin...), quality products and a (very) lively atmosphere. The only major differences are the number of covers (450 here) and the décor, the designers of this Bouillon République having retained the woodwork and marquetry panels of the former Chez Jenny brasserie. After weeks of waiting, we finally found a slot at 3:00 PM on Sunday, but the restaurant was so crowded that we had to wait a long time for someone to take our order. The main dishes took almost an hour to arrive. The appetizers were subpar, with dry bread, and my beef Bourguignon wasn't good at all. However, my boyfriend's dish was enjoyable, and we both liked our dessert very much. The prices are cheap, which explains the crowd, but some of the food we tried didn't meet our expectations. Additionally, the staff seemed tired and exhausted because of the crowd so at the end I give a very average points to this experience.
