Chic and modern trattoria in Paris offering a cuisine with Tuscan products, meats and original dishes.
Baffo in Italian means "mustache" and here this word refers to the chef and owner, Fabien Zannier, of Italian origin. In a trattoria chic and modern atmosphere, his aim is to make an authentic cuisine based on Tuscan products imported directly from Maremma, his home region for all that is meats, cheeses, fruits and vegetables. The meat comes from Aubrac and fish from Brittany. On the carte (seasonan and changes regularly), new dishes that will surprise more than one, such these Taglioni Galio, peperoncino, mimolette, tartufo (pasta with fresh garlic, pepper, extra old mimolette and black truffle), these Calamaretti in padella con olive taggiasche e purè di patate viola e Gorgonzola (squid sautéed with olives taggiasche, mashed purple potatoes and Gorgonzola) or this Stufato maremmano (beef in Burgundy fashion). You must of course enjoy Salumi e Formaggi maremmani (pure breed pork Cinta Senese of Tuscan and Organic ewe's milk cheese) and especially ask to sit down, in the cellar arranged for a total immersion and good Italian wines within reach.
