La Forge is a sort of Southwestern country inn just off the rue Mouffetard. The owner makes a hell of a semi-cooked foie gras, cooks game like no other in the season, loves mushrooms, cabécou and strawberries - everything that makes the gastronomic reputation of his country. Even if he has a preference for meat, he does not neglect the sea and he knows how to put a sea bass or turbot in good company. He also knows how to distance himself from the cuisine of his country and bring his own little touch of creativity.
