Institution offering fresh pasta with various grains grown without fertilizers or pesticides.
This institution of the Latin Quarter has delighted passers-by since 1984. In January 2016, it was taken over by Emmanuel Phung and Ugo, a duo of passionate individuals willing to work hands-on to honour the reputation of the place. They have preserved all the authenticity of the address, which includes plants of all kinds and stone walls that are still standing. For 34 years, the institution has always offered the same concept: fresh dough made every day with various cereals (rye, buckwheat, chestnuts…). The products are grown without fertilisers or pesticides for a more natural and flavoursome result. Once the dough is prepared, it is accompanied by vegetables, fish, or meat according to the ingredients available that day. For example: rye dough accompanied by Parma ham, courgettes, white wine, fresh cream, and grated Comté cheese, chestnut dough with duck fillets, nutmeg, fresh cream, and mushrooms, or a vegetable dough omelette. As for dessert, the kitchen makes a delightful chocolate pie accompanied by an orange marmalade with lemon zest that is hard to resist.
