LAURENT DUBOIS
Laurent Dubois has been a family of cheesemakers for three generations. After his shop on rue de Lourmel (which he did not leave) in which he was consecrated Best workers in France in 2000, he chose to settle at two steps from the Seine in 2011. In his rather chic shop, his selection of cheeses is still rigorous. Its suppliers are sorted on the track and then refines in its own cellar. Labels are precise, mentioning the region of origin, the name of the producer, the fat rate… The affinée of refined Ambert Au is a pure delight, as is Metabief's golden mountain or the great cru.
