L'Escudella (Assiette in Occitan) is the new flagship of Paul Arthur Berlan, a former contestant on M6's Top Chef in 2011, whom we previously met at Métropolitain in Saint-Paul. Here, the setting is more chic (Eames Vitra chairs, large wall mirrors, elaborate lighting, art books...7e oblige), but the cuisine retains the Languedoc accent dear to this young chef, "without falling into folklore," he points out, extending his influences to the far South. For example, braised beef cheek, seasonal vegetables, lightly creamed rigatoni, sautéed veal sweetbread, mushroom tortellini, Angostura jus, and cod roasted in semi-salted butter, fennel lacquered with bramble honey and citrus fruit. Another regional touch is the Paris-Carcassonne, an original dessert inspired by the Paris-Brest, but lighter, made with hazelnuts and pralines from Languedoc.
