In Paris, there are only few incredible places. Including Les Climats, housed in this former PTT ladies' canteen, nicely updated with nice high ceiling and English wallpapers, all punctuated by comfortable red chairs. On the menu, tradition and creativity meet. "Langoustines fried in butter; simmered peas with tagetes and grapefruit, crab's grip broth"; "suckling lamb from the Pyrénées, saddle and chucks roasted with wild garlic, light sesame and chickpea purée, lemon/parsley condiment"; "braised calf sweetbread with lemon confit, Battaglione cucumber with new garlic and wild almond chips"… Here's a brief and very gastronomic overview of the dishes where the products are of quality and rhyme with the season. Desserts are just as refined as the "blackberry soufflé flavored with blackberry liqueur, fresh strawberries and hazelnut ice-cream".
