Francis Firmin has an unusual career: a former surgeon, he decided to dedicate himself to his passion, wines, rather than taking retirement that we imagine well-deserved. Originally designed as a place of tasting, the space that he opened in Rue de Montessuy quickly became a small restaurant, whose slate composes a domestic menu as you wish. A pluma pata negra, snails with butter, a terrine of foie gras, a tart with artichokes, a brandade of haddock with coriander for the starters, quenelles of scallops, a cod in Provençal way, a shoulder of piglet with rosemary or a fat duck for the dishes. It is Francis Firmin who makes the desserts. The products are chosen with great care and are sublimated according to the rules of gastronomic art. The menu changes according to the market, and every lunchtime, Francis offers you a daily special that he can praise. We love Chez Firmin!
