We first met Tomy Gousset at the piano of Pirouette, in Les Halles. Since then, this former student of the Ferrandi school has been digging his creative furrow in the "gastro-bistrot" sphere with talent. He is now a star, with a Michelin star. In his flagship restaurant - he has opened two other establishments in Paris: Hugo & Co and Marso & Co - the Cambodian-born chef gives his dishes a distinctly "gastro" feel. Seen on a new season's menu: fried gnocchi with Burgundy truffles and grapefruits, veal tartar with gribiche sauce and turnips, buckwheat sweetbreads and peppercorns, pan-fried scampi with sarda fried reggola, rum baba with blackberries and basil ice cream... It's a real treat!
