She chose to make this feature a strength; she obtained a CAP Boulangerie and soon designed her range of gluten-free breads and pastries. After supplying many Parisian hotels, building her reputation and writing books specialising in the subject, she opened her own gluten-free bakery. You can choose a baguette, string, ball or pastries like very good canelés, brownies and cakes, whether you're intolerant or not, just because they're good!
