If you used to frequent this restaurant in the 9th arrondissement, don't panic. Oma, masterfully led by Ji-Hye Park, is now the table of the elegant Château des fleurs hotel, close to the Champs-Elysées. Here, the Korean chef pursues her gastronomic path with talent, offering "simple and generous" dishes inspired by her childhood, such as this Mulhué (raw fish and vegetables soaked in a spicy glazed broth). The menu is deliberately short (5 starters, 5 main courses, 4 desserts), a guarantee of fresh produce.

Beef tartare was the star of the dinner, nailing the taste, creativity and presentation. A must get here and one of the best I’ve had. Galbi tang was surprisingly traditional but very solid and arguably better than in some places in K-town in New York. Seabass ceviche hit all the right notes but wasn’t anything extraordinary. I would skip the octopus dish — too tough and the topping that didn’t quite work for it. Note to chef: I’d prefer a simple tempura-like crust, sous vide the hell out of it, and with plenty of sauce to dip typically-bland/dry octopus meat into (ratatouille-like side wasn’t moist enough). Cocktails weren’t great.
The place isn’t cheap but the ambience makes up for it.
