Toru Okudais a kaiseki master chef extremely known in Tokyo where he runs Okuda and Koju, two restaurants that are recognised by the biggest international guides. In Paris, he made the choice of an establishment with 23 seats, divided into several areas including a private Japanese style dining room for 4 people in the basement. The trip starts in a zen and minimalist wooden decor with waitresses wearing kimono. A meal at Okuda is like an omakase menu. For this special menu, you only discover the dishes as they are served. The cooking is mainly done by steam and on wood fire (the kitchen equipments were imported from Japan). It uses very high quality products, for example beef comes from Hugo Desnoyer, and the fish are excellent. His skill in seasonings is fabulous, the sashimis have this "big plus" that make them remarkable. His signature dish: the chawan-mushi, a savory custard crab meat and mushrooms in autumn is amazing. The drinks menu displays French wines but also wines from five Japanese varieties koshu, sakes, of shoshus and green teas. No need to go to Japan anymore!
