This Brasserie, opened by Stéphane Manigold, well-known in the restaurant world, is located opposite Contraste, another of his restaurants. For this address, he has placed his trust in Sylvain Courivaud, a former chef at Le Meurice. This young chef from the Charente region uses all kinds of cooking methods (we couldn't resist): grilling, barbecuing (big green egg, binchotan for connoisseurs) and flaming.
