Chic hotel-restaurant in Paris preparing French gastronomy, brunches and a wine list.
Le Balthus opened in late 2016, just after the Villa Saint-Honoré residence, a chic hotel of the 8th arrondissement. In both cases, the decoration is inspired by the 1930's while being very contemporary with refined furniture in shades of gold, beige and gray, all highlighted by the marble of the floor and the beautiful moldings of the ceiling. But Le Balthus's advantage is undoubtedly its hidden restaurant side because it is similar to a well kept secret, nestled in this beautiful hotel, and only insiders reach it. It's no bad thing because it's ultimately the ideal setting for a relaxing meal in this 8th arrondissement, often so noisy. As for the dishes, French gastronomy meets expectations in the plates thanks to the talent of the chef Baptiste Pialot who reinvents some dishes by adding his personal touch, most often inspired by Asia thanks to his Asian companion and the Pourcel brothers as well as Michel Rostang with whom he worked. On weekends, the restaurant also offers brunches for the greatest pleasure of traveling taste buds. When it comes to the wine list managed by Thierry Montoya, a high-flying sommelier, it is really the icing on the cake.
