Fascinated by Japan, a good living, Dominique Bouchet has left the palaces for a more intimate table for a number of years. Its plates look like it, greedy, creative, but often in the line of a traditional gastronomy in the image of a fillet of beef and its melting apples with flowers of thyme and mushrooms or a wild turbot with muslin of rhubarb and butter in grapefruit juice. Besides desserts, abundance and Norwegian omelet in the grout of pineapple have become unavoidable delicacies.
