LE V DU VERNET
Restaurant decorated with superb glass windows presenting light and delicate dishes with fresh and seasonal products.
The beautiful glass roof designed by Gustave Eiffel always looks after, but the restaurant has been completely redecorated, just like the hotel. Kitchens led by Richard Dress, open on the room by a glass bay, come out of the plates in the air of time, light and delicate, showcasing fresh and seasonal products. False classical plates (langoustines of Norway langoustines, citrus fruits and avocados to the fruit of passion, feuilleté of the Basque pig just lukewarm, meat juices and pickles de vinegar) and prepared with accuracy. We love the fine control of cooking on fish (roast turbot, lemon steamed stone-baked stone) as well as meat (charolaise beef ribs), and service to small onions. In dessert, you crack for "chocolate-passion sheets": chocolate foam and fruit of passion, chocolate sheet, mousse passion.
