When we visited at lunchtime, three people were playing dice. A clue that the house must be friendly. And it is, with Virginie and Laurent's warm welcome. The cuisine, which evolves with the seasons, plays on the regionalist spirit of the South-West and Pyrenees. Chipirons, fromage de tête, os à moelle, magret de canard, chorizo de Navarre, gambas grillées aux poivrons, prunes à l'armagnac, moelleux au piment d'Espelette... There's generosity in the dishes at La Tute. How pleasant!
