The name is intriguing: bariolé. You'd expect color. In fact, this triangular "shell" - enclosing a small savoury dish or a sweet filling - is naturally coloured according to its contents. And in the mouth? The bariolés we tasted were exquisite and richly flavored. In early October, for example, you could choose between the now-classic Tutti Fromaggi, the Blandine (chicken and mushroom blanquette) and the BB (grilled beef and cheddar). Original, isn't it? Ideal for an aperitif with friends, the bariolés are served as tapas.
