Exposed stone walls, wooden tables, a blue facade: it's certainly been seen many times before, but it's still very pretty. This Bien Élevé deserves its name; the service is friendly and fast when needed. It's all the more deserving in that the meats - the house specialty - offered here come from Aveyron in particular, where they are "the fruit of artisanal rearing methods specific to the Aveyron region". The dishes chosen that evening lived up to the promise of quality, from the tender rump steak to the beef picanha.

Open Monday to Saturday for lunch and dinner. Reservations recommended. Lunch menu: €22 (starter-main course or main course-dessert). Well-bred menu: €43 starter-main course-dessert (or cheese + €2). Starters: €12; main courses: €24; desserts: €10.

Visited in November 2023 and had the beef tartare and the cut of the day- both were very tasty and tender. The space is small so it might be worth making a reservation on busier days.
