1 star restaurant in Paris offering seasonal French products, smoked fish, meats and desserts.
This restaurant has everything in the small neighborhood, but you can see very quickly that it is far above! First of all the frame, both clean and very cozy with small wooden tables, and a beautiful vegetable garden suspended on the background of beautiful white and blue walls. But it's mostly the kitchen that makes this small restaurant in the big ones. The chef, Eric Fava, a small thirty, has made his weapons to the greatest (the George V, L 'Ambroisie, the Gascon, the Pergolese…) before opening his first restaurant with his companion, Léonie Laurent, who is looking after the welcome in the room. In its modern and open kitchen on the room, you can watch it seriously with its second and when the dishes arrive, it is really, without exaggeration, the high-flying gastronomy that goes to you: simple appearance, elegant just what it takes and a real delight in the mouth. The work of French seasonal products, adapted to the taste of the day, is successful, nothing to say. On the day of our passage, we were able to regalate with a roll of smoked salmon in the Philadelphia, avocado foam and wasabi cream before chaining into a beef mist, dried tomatoes, peanuts and vitelotte seed espuma to finish with a beauty Dessert Granny Smith, white cheese albully, specculobone lands. A free-of-charge for this establishment which can easily compete with a few much more expensive stars of the capital, and who will probably pick up its first star much faster than others!
