Just off the Gare Saint-Lazare, Comptoir de l'Europe is the haunt of Nicolas, who for many years ran Caseg, the Parisian arm of Crédit Agricole. Born in Figeac, the fifty-something has roots in Aveyron, which can be seen in dotted lines on the menu of his brasserie. Alongside the chef's rather iodized suggestions (roast fillet of st. Pierre; artichoke and clove méli-mélo with sea urchin coral emulsion), a few more earthy dishes hit the spot, including the famous Aveyron veal head with gribiche sauce.
