After working as a caterer and training with Eddy Creuzé and Christophe Moret, young chef Thomas Briandet opened a gourmet restaurant in the family home at the end of 2023. The former hunting lodge has the charm of an old house, decorated with taste and modernity. Here, the chef creates precision cuisine, drawing on tradition in his meticulously-crafted reinterpretations. Examples include egg 64°C and coral lentils carbonara, scallops and butternut in two ways, and venison and celery mousseline with black truffle.
