The seven families of cheeses are offered in 250 different ways throughout the year, depending on the season, and come from small producers rigorously selected by René Tourette, the grand master of the place. After maturing in the cellars of Strasbourg, the cheeses are redistributed to the various sales outlets in Alsace.
