The menu illustrates a well-executed love of the product: semi-cooked duck foie gras with lemon meringue, fillet of sea bass, zucchini leek clafoutis, avocado basil cream, beef chuck confit and potato and comté cromesquis, calf's head and cabbage compote with bacon, gribiche sauce, finally an apple crumble, salted butter caramel cream and bourbon vanilla ice cream.
