Its opening on July 11 was a real event in Saint-Ouen. And with good reason: right in the heart of the city, chef Thierry Marx opened his vast bouillon, surfing on the comeback of these popular, traditional restaurants. It's fair to say that the chef has largely succeeded: authenticity and affordable prices go hand in hand here, with mayo eggs, knife sausage, pork loin and excellent desserts. The chef has paid particular attention to the quality of the produce, and the spacious premises also boast a pretty rooftop. A successful bet!

Thierry Marx oeuvre pour le peuple ! Logique avec ce patronyme ! Ouverture récente oblige, le bouche à oreille a bien fonctionné et les deux salles fraichement peintes sont pleines le samedi soir. C'est joli, simple et agréable, quoique (très) bruyant ! Le staff est motivé, ce qui compense avec un certain amateurisme. Côté carte, le concept du Bouillon est respecté : en ajoutant entrée, plat et dessert, on arrive un total de 20 à 25€ environ par convive, sans boisson. Dans l'assiette, des plats simples, de type cantine, mais efficaces. Toutefois, le Fish & Chips est très moyen, notamment pour son enrobage, la portion de poisson très limitée et les frites mal cuites. Les plats de viande sont un cran au-dessus. Les desserts sont généreux (chou chantilly), plutôt bons (crème brûlée, île flottante), avec un bémol pour la mousse chocolat, ratée. Au final, un resto sympathique mais qui a une belle marge de progression devant lui.
