The most refined dishes sublimate the combination of flavours. You will enjoy the Foie Gras of duck, half-cooked with Muscat de St Jean de Minervois D. Barroubio, sweet onions and brioche toast, the Monkfish rosette of potatoes, leek fondue, shellfish sauce, or the Fricassee of young deer, pommes cocottes, mushrooms and small onions. You will finish the meal with a firework display of flavours with the Dark chocolate sphere, mascarpone mousse and Morello cherries or the Lemon cream with red fruit coulis.... You will have to choose your dessert at the beginning of the meal, ultimate quality obliges!
