A wine list that honours the region (try the wonderful Château Auzias in Cabardès and IGP Cité de Carcassonne), a charming and attentive staff, a well-kept setting, a very classical decoration and a very pleasant indoor terrace in summer, sheltered from the summer crowds. The most refined dishes sublimate the combination of flavours. You will enjoy the Foie Gras of duck, half-cooked with Muscat de St Jean de Minervois D. Barroubio, sweet onions and brioche toast, the Monkfish rosette of potatoes, leek fondue, shellfish sauce, or the Fricassee of young deer, pommes cocottes, mushrooms and small onions. You will finish the meal with a firework display of flavours with the Dark chocolate sphere, mascarpone mousse and Morello cherries or the Lemon cream with red fruit coulis.... You will have to choose your dessert at the beginning of the meal, ultimate quality obliges!

C'est un lieu calme, avec une cuisine vraiment délicieuse, je recommande vraiment le foie gras en entrée et les ravioles au cèpes et foie gras qui sont vraiment délicieux.
