The Hôtel de France restaurant is one of Castelnaudary's not-to-be-missed places to sample the famous cassoulet with goose and pork confit. The chef also offers other specialties such as semi-cooked foie gras, parillade of meats with duck breast, beef and homemade sausage. And let's not forget the iodized flavours of certain dishes, such as gambas risotto à la provençale. The brasserie area is ideal for a hearty lunch, with cassoulet, fine mixed salads and grilled meats on offer! Those who have had trouble making a choice can leave with home-made preserves of ready-made dishes, pâtés and foies gras to prolong the pleasure or share with friends and family... The establishment has seventeen well-equipped rooms and private parking. Don't leave without browsing through the guest book, which dates back to the 1930s and in which a certain Sacha Guitry wrote: "Le cassoulet de Castelnaudary était si bon, qu'en le mangeant j'ai cru manger moi-même!"

Basic hotel needing renovation. Room was clean but bathroom (see photo) very dilapidated. We arrived at breakfast around 8.45 to find many of the food items gone. Noone was on hand to sort this out but after asking at reception we managed to get them to bring some more eggs for us to boil ourselves. A real disappointment
