Here, tradition and modernity come together with balance, from the décor to the plate. In the kitchen, Chef Julien juggles local and seasonal flavours. Among Julien's specialties, which he works with local fishermen and market gardeners, are Cranquettes de Gruissan soup and rouille-filled doughnut, octopus tentacles from Gruissan, the famous eel bourride, fish à la plancha and petit gris snails à la Narbonnaise. But save room for dessert. Wines from "natural" winemaking are a perfect match for the cuisine.
